Easy Mexican Casserole



This is a very easy and delicious dish. I often substitute ground turkey and low-fat dairy and it's still delicious! Served with chips, sauce and green salad.


* Ingredients : 

° 1 pound ground lean beef
° 1 can style ranch beans
° 1 bag 10-12 oz tortilla chips, crushed
° 1 can tomato roe-tel
° 1 small onion chopped
° 2 cups shredded cheddar cheese, divided
° 1 packet taco seasoning
° 1 box of cream of chicken soup
° 1/2 cup water
° Sour cream and sauce, for serving

* Preparation : 

Preheat oven 325 degrees.
In  skillet, brown meat and dry fat.
Adding beans, tomatoes, onions, taco seasoning, soup, // water.
Simmer on mediumlow heat to everything is well blended and completely heated.
Grease  9 13 dish casserole.
Top with a layer of mashed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese.
Repeat the layers.
Covering with aluminum foil & baking for 20-30 min 
Let it for 5-10 min before serve.
Cover with  cream sour // sauce.
