° 1/2 c oil 
° 2 1/2 c onions, chopped I used 1 1/2 large white onions, chopped
° 1 tsp all-purpose flour
° 1 cup milk
° 2 teaspoons baking powder
° 2 teaspoons white granulated sugar
° 2 tablespoons self-rising or regular cornmeal
° 1/2 teaspoon of salt
° 1/4 teaspoon black pepper


In a large mixing bowl, add baking powder, flour, cornmeal, sugar, salt and pepper. Whisk until well blended.
Add chopped onions, then stir until well blended.
Add milk and stir until well blended.
Place a skillet on the stove and lower the heat to medium.
Add the oil and let it heat up.
Pour the mixture and place each one in the pan. Gently press down on each with a spatula to flatten them a bit.
Cook each side for a few minutes until golden brown.
Remove from skillet onto a clean plate lined with paper liners to drain off any excess oil.

Serve hot & enjoy !
