Lemon Asparagus Chicken Pasta


°500g free-range chicken breast, grilled and cut into strips
°500g asparagus, ends removed, cut into pieces
°300g linguine pasta (spaghetti or fettuccine will also work)
°3/4 cup heavy cream
°2 tablespoons of butter
°°salt and pepper to taste
°1 tablespoon lemon zest
°1 tablespoon lemon juice
° 1/3 cup finely grated parmesan cheese

* Methods :

Cook pasta in salted water according to package directions. Add the asparagus to the pan for the last 3 minutes of cooking.
Reserve 1/4 cup pasta cooking liquid.
In a small saucepan, combine heavy cream, butter, and 1/2 tsp salt and 1/4 tsp pepper over medium-high heat. Bring to a boil and cook, stirring, until thick enough to coat a spoon, about 4 minutes. Removing to heat and stir in lemon zest // juice.
Return the pasta and asparagus to the pan in which you cooked them with the chicken.
Pour the cream sauce over the pasta mixture and toss to evenly coat, adding more pasta water if needed to thin the sauce. Stir in the parmesan. Alternatively, you can just toss the pasta with the sauce and arrange the chicken and asparagus on top of the pasta.
Adding more salt also pepper to taste if need. decorate with chop parsley & lemon slices if desire.
