Broccoli and cheddar soup recipe is absolutely perfect (In the slow cooker!)
*Ingredients :
° 4 cups (1000 mL) chopped broccoli heads
° 1/2 yellow-onion, finely chop
° 2 c (500 mL) grated-carrots
° 4 c (500 mL) vegetable (or chicken) broth
° 1 tsp of salt
° 1/2 tsp pepper
° 1/8 tsp nutmeg
° 3 tsp of butter
° 1/3 cup (85 mL) flour
° 1 cup (250 mL) 10% cream
° 2 c cheddar cheese
* Preparation:
Add broccoli, onion, carrot, broth, salt, pepper and nutmeg to slow cooker and cook on LOW for 4 hours. In pot, melting butter, adding flour also whisk. Take 1 c liquid from slow cooker also adding very slowly to pot, whisk constantly. Adding cream v, beat constantly. Adding this blend to slow cooker. Add cheddar cheese (1 cup at a time). To mix together. Close slow cooker & simmer for 30 min . Serve and garnish with a little extra cheese if you like.
