* Banana Cream Pie *


°1 (9 inch) pie crusts, baked
°3 c milk
°3⁄4 c sugar
°1⁄3 cup all-purpose flour
°1⁄4 tsp salt
°3 lightly beaten egg yolks
°2 tablespoons of butter
°1 teaspoon vanilla
°3 banana


 Prepare 9-inch baked crust pie.
In  saucepan, scald milk.
In another saucepan, combine the sugar, flour and salt; gradually add the boiling milk.
Over heat, stir constantly, cook to thickened.
Cover and, stirring occasionally, cook for two more minutes.
In a small bowl, prepare the 3 lightly beaten egg yolks; stir a small amount of the hot mixture into the beaten yolks; once well mixed, add the yolks to the hot mixture.
Cook another minute, stirring constantly.
Remove from the heat and stir in the butter and vanilla.
Let stand until lukewarm.
When ready to pour, slice bananas and divide into pie crust; pour hot mixture over bananas.
If desired, make a meringue (you will have 3 egg whites left over) to garnish the pie, or simply let the pie cool until ready to serve.
