Lemon Cream Cheese Bars



Cake mix makes these super easy bars, and lemon juice, rind, and coconut add flavor.

+What you will need.

°1 package (about 18.75 ounces) vanilla or white cake mix
°2 divided eggs
°5 tablespoons melted butter
°1 cup shredded sweetened coconut
°8 oz cream cheese
°1 tsp fresh lemon juice
°2 to 3 teaspoons grated lemon peel
°1/2 cup granulated sugar

* How do I do it:

Greased 13" x 9" x 2" baking pan with flour  Preheat oven 350°F (180°C/gas 4).
In mixing bowl of an mixer, beat cake blend with 1 egg, melted butter & coconut until well mixed. The blend will be crumbly. Reserve 1 cup of the breadcrumb mixture and set aside. Place the remaining breadcrumb mixture on the bottom of the prepared pan to form a crust.
Bake the crust for 12 minutes. Take it out of the oven.
While the crust is baking, in a separate bowl with an electric mixer, whisk together cream cheese, lemon juice, peel, sugar and remaining egg, scraping bowl once. Whisk until well blended. 
Pour the cream cheese mixture evenly over the baked crust.
Sprinkle the reserved breadcrumb mixture over the cream cheese layer.
Bake for 25 to 30 minutes or until the color turns light brown.
