*ingredients :

°4 cups finely chopped potatoes
°3 tablespoons butter
°3 tablespoons of flour
°1 12 cups milk
°1 teaspoon salt
°1 pinch cayenne pepper
°1 cup shredded cheddar cheese
°1⁄2 cup shredded cheese, sprinkled over

* Directions :
In a small saucepan, melt the butter and mix with the flour.
Let sit for a minute.
Add all the cold milk, stirring with a whisk.
Season with salt and cayenne.
Simmer the sauce over low heat until smooth and boiling, stirring occasionally with an electric beater.
Turn off the fire and stir in the cheese.
Place ½ of the diced potato in a lightly greased casserole dish.
Pour half of cheese sauce on potatoes.
Repeat process with second layer of potatoes & cheese sauce.
Sprinkle the remaining cheese on top.
Distribute a little sweet pepper for coloring.
Bake, uncovered, for about an hour at 350 degrees Fahrenheit.
