This easy German potato pie called kartoffelpuffer is fairly quickly to making at home & will be crunchy.fried pancakes are a real treat, served perfectly with homemade apple sauce (which cuts). oil) or sour cream.   

* ingredients :

° 1 pound potatoes, about 2 medium or 3 small
° 1/2 medium onion
° 3/4 teaspoon kosher salt, add to taste
° Fresh ground pepper, taste  Nutmeg, taste  
° 1 large egg
° 1/4 c vegetable oil for fry
° Apple sauce and sour cream, to serve, optional
° 1 tablespoon coarsely chopped parsley, optional garnish

* Steps 

Gather the ingredients.
 Potato-Pancakes (Kartofel-Bäffer)
Wash and peel the potatoes and grate them coarsely.
Mashed potatoes in bowl  Placing mashed potatoes on clean cloth or cotton cloth & squeeze out as more liquid as possible to bowl.
Squeeze the liquid from the potatoes using a clean cloth
Let the liquid stand a few minutes, then carefully spoon it out and skim off the top layer of liquid, leave potato starch at bottom of the bowl.Returning potatoes to starch. 
Grate onions on the potatoes.
Adding grated onion to grated potato mix
Adding salt, pepper, nutmeg and eggs. blend well.
Add salt, pepper, nutmeg and eggs to the grated potatoes in a bowl
Heat the oil over medium-high heat in a large skillet, preferably nonstick, until it starts to shimmer.
Large skillet with butter  Place about ½ cup of potato mixture in hot oil and spread over the back with a spatula.Frying original for 4-5 min on every side or to golden brown.

Drain ON paper towels & serving hot with applesauce & sour cream if wanted .decorate  with parsley if wanted .
