Epic Beef Nachos Supreme




*ingredients:


°taco seasoning (or you can use 1 packet/serving of store-bought taco seasoning)

°1 lb. minced meat

°1/2 yellow onion, diced

°2 bags of tortilla chips (16 ounces each)

°1 The beans can be re-fried

°16 ounces shredded cheese of your choice (I used cheddar and monterey jack)

°3 Roma tomatoes, cut into cubes

°2 to 3 green onions, sliced


*Directions:


- Preheat oven at 400 degrees.


Meanwhile, on the stovetop, brown the ground beef and chopped onion over medium-high heat until just cooked through (about 8 minutes), then drain.


Return beef to skillet, and drizzle over taco sauce.


Stir in 3/4 cup water, and bring to a simmer, reduce heat, and simmer until liquid has mostly evaporated, about 5 minutes.


- While the beef is cooking, add a generous layer of chips to two baking sheets lined with parchment paper.


Spoon onto refried beans, half of it on each skillet. These are thick, but I added a heaping spoonful on all of the chips. (The spoonful will spread as the oven heats up.)


Spoon half of the minced meat onto each tray of chips.


Sprinkle grated cheese on top.


Bake at 400 degrees for 15 minutes.


Remove from the oven and sprinkle over the diced tomatoes and green onions.


- Serve immediately.
