* Ingredients:
• 2 cups grated courgette
• 2 beaten eggs
• 1⁄4 cup chopped onion
• 1⁄2 multipurpose flour cup
• 1⁄2 cup of grated Parmesan cheese
• 1⁄2 cup of grated mozzarella
• Salt to taste
• 2 tbsp vegetable oil
1. In a medium bowl, mix the zucchini, egg, onion, flour, parmesan cheese, mozzarella and salt. Stir well enough to distribute the ingredients evenly.
2. Heat a small amount of oil in a frying pan over medium-high heat. Drop the zucchini mixture by stacking tablespoons then flatten with a spoon to form a pie and cook for a few minutes on each side until golden.
