Sweet potato pie



*Ingredients:

°1 (1 pound) sweet potato
°Half a cup of soft butter
°1 cup white sugar
°Half a cup of milk
°2 eggs
°½ teaspoon ground nutmeg
°Half a teaspoon of ground cinnamon
°1 teaspoon vanilla
°1 pie crust (9 inches), uncooked

*Instructions:

Boil whole sweet potatoes, skin on, for 40 to 50 minutes or until tender. Pour cold water over the sweet potatoes and remove the peel.
Divide the sweet potatoes into a bowl. Add butter and mix well with a mixer. Adding sugar, milk, eggs, nutmeg, cinnamon & vanilla. Beat on speed until mix is smooth. Pour the filling into an unroasted pie crust.
Bake at 350 F (175 C) for 55 to 60 minutes, or until knife inserted in center comes out clean. The pie will puff up like a soufflé, then sink when it cools.
