Parmesan Potatoes with Roasted Garlic Butter


°3 pounds baby potatoes, washed and quartered
°1/4 cup olive oil
°6 large garlic cloves, finely chopped or chopped
°Fresh crushed salt and black pepper
°1 tablespoon Italian seasoning
°3/4 cup grated fresh Parmesan cheese
°1/2 cup unsalted butter
°Fresh parsley, for garnish
°1/2 c bacon pieces (optional)...


To cook your roasted garlic potatoes with garlic butter parmesan: Preheat the oven to 400ºF. Grease a large baking sheet with non-stick spray or olive oil and set aside.
Boil the red potatoes for 5 to 8 minutes to preheat them. They will be softer inside when cooking.
In  bowl, combine 1/4 c olive oil, garlic, salt, herbs, pepper also Parmesan cheese. Add a little more olive oil if the parmesan has absorbed most of it.
Mix the potatoes with the garlic and Parmesan cheese to coat.
Place the coated potatoes side down in a single layer on the prepared baking sheet. Place the baking sheet on the bottom rack of the oven. Cook your potatoes in garlic butter for 25 minutes, turning them after 15 minutes with tongs or a spatula, until the potatoes are golden brown and crispy on the edges.
Meanwhile, gently melt the butter in the microwave and mix with chopped fresh parsley. Remove the roasted potatoes from the oven and drizzle with parsley butter sauce. Add the bacon pieces, toss to coat and serve your roasted potatoes with Parmesan garlic butter immediately.
