Banana Cream Pie


°1 (9 inch) pie crusts
°3 c milk
°3⁄4 c white sugar
°1⁄3 cup all-purpose flour
°1⁄4 tsp salt
°3 lightly beaten egg yolks
°2 tablespoons of butter
°1 teaspoon vanilla
°3 bananas

Preparing 9-inch bake pie crust.
In  saucepan, scald milk.
In other saucepan, combine sugar, flour and salt; adding boiling milk.
ON heat, stirring constantly, cook to thickened.
Covering and, stir occasionally, cooking for two more minutes.
In  bowl, preparing 3 lightly beaten egg yolks; stirring  amount of the hot mixture into the beaten yolks; tim well mixed, add the yolks to hot mixture.
Cooking another minute, stir constantly.
Removing from the heat & stir in the butter and vanilla.
Let stand to lukewarm.
When ready to pour, slice bananas and divide into pie crust; for a hot mixture on the bananas.
If desired, making a meringue (you will have 3 egg whites left over) to garnished pie, or simply letting pie cool to ready to serve.
