MEXICAN CASSEROLE



*Ingredients

°1 pound lean ground beef
°1 can of ranch-style beans
°1 bag 10-12 oz tortilla chips, crushed (I didn't use the whole bag)
°1 can Ro-tel tomatoes
°1 small onion, chopped
°2 cups shredded cheddar cheese, divided
°1 package taco seasoning
°1 can cream of chicken
°1/2 cup of water
°sour cream and salsa for serving

*How to do it

Preheat oven 325 degrees. In a large skillet, brown the meat and drain the fat. Stirring in beans, tomatoes, onion, taco season, soup & water. Simmer over medium-low heat until well combined and heated through.
Greased 9×13 casserole dish. Laying down a layer crush tortilla chips, follow by a layer of meat/bean mix, then half of cheddar cheese. Repeat layers. Covering with foil and bake for 20-30 min 
Letting stand 5 to 10 min before serve. Topping with sour cream & salsa.
