Crispy Apple Cheesecake




INGREDIENTS

FILLING:
1/2 c graham cracker crumbs
1/4 c cooking oats
4 tsp brown sugar
3 tsp butter, melted
2 pack (3 ounces each) cream cheese, softened
1/4 c pack brown sugar
1 egg, beaten
3 tsp sour cream
1/2 tsp ground cinnamon
1/8 teaspoon ground ginger
2/3 c sliced ​​peeled apple
TRIM:
1 tsp all-purpose flour
1 tsp quick cooking oats
1 tsp brown sugar
1/4 tsp ground cinnamon
2 teaspoons cold butter

PREPARATION

In a small bowl, combine cracker crumbs, oats and brown sugar; stir in butter. Tap the bottom of a 6-in. springform pan sprayed with cooking spray; put aside.
For filling, in a small bowl, beat cream cheese and brown sugar until smooth. Add egg; beat on low speed until smooth. Stir in sour cream, cinnamon and ginger. Pour over the crust. Arrange the apple slices over the filling. For the filling, combine the flour, rolled oats, brown sugar and cinnamon in a bowl. Cut in the butter until crumbly. Sprinkle over the apple.
Bake at 350°F for 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; chill 1 hour more. Refrigerate overnight. Just before serving, remove sides of pan. Refrigerate leftovers.
