Long John Silver's Batter


*Ingredients

°2 pounds cod cut into 3-ounce pieces (you can use other types of fish)
°2 cups flour
°1/4 cup cornstarch
°2 teaspoons of sugar
°2 teaspoons of salt
°1/2 teaspoon baking powder
°1/2 teaspoon baking soda
°1/2 teaspoon onion salt
°1/2 teaspoon paprika
°1/4 teaspoon ground black pepper
°16 ounces club soda
°frying oil

*Instructions

If you're not using a deep fryer, heat 8 cups of vegetable oil in a heavy saucepan until the temperature reaches 350 degrees. Prepare the dough by mixing flour, cornstarch, sugar, salt, baking powder, baking soda, onion salt, paprika, ground black pepper. Stirring to combine all dry ingredients. Add the club soda to the dry ingredients. The batter will foam, keep stirring. Place the fish pieces in the batter. Coat the fish with the batter, place it in the hot oil. Fry the fish for 2 to 3 minutes or until the batter is golden brown and the pieces of fish begin to float on the surface of the oil. Drain the fish on a wire rack.
