Blueberry Cookies


°300 g (2 cups) unbleached all-purpose flour
°5 ml (1 tsp) baking powder
°1 ml (1/4 tsp) baking soda
°1 pinch of salt
°115 g  unsalted butter
°125 ml (1/2 cup) blueberry honey or another local honey
°55g (1/4 cup) sugar
°2 eggs
°15 ml (1 tbsp.) cider vinegar
°100 g (2/3 cup) dried blueberries
°70 g (1/2 cup) frozen blueberries


Put the grill at the center of the oven. Preheat oven 200°C (400°F). Line two baking sheets with parchment paper or silicone mats.
In bowl, mixing the flour, baking powder, baking soda also salt.
In another bowl, cream the butter with the honey and sugar with an electric mixer. Add eggs and vinegar. Whisk until the mixture is homogeneous. On low speed, add the dry ingredients. With a wooden spoon, stir in the dried blueberries and frozen blueberries.
Using a 30 ml (2 tbsp) ice cream scoop, form balls of dough and distribute 12 balls per sheet.
Bake, one sheet at a time, 14 minutes or until the patties are lightly browned.
