Best Blueberry Lemon Muffins





* Ingredients

° 1 ½ cup blueberries
° 2 cups, plus three tablespoons flour, divided
° 1 ½ teaspoon baking powder
° ½ teaspoon of salt
° ½ cup butter, unsalted and at room temperature
°             2 egg
° 1 c sugar
° 1 tsp lemon extract
° 7 tsps of milk
° 1 tablespoon lemon zest
 Streusel:
° ¼ cup) of sugar
° 2 tablespoons of flour
° ¼ cup brown sugar
 ° 2 tablespoons melted butter

*Instructions

FIRST STEP:
Preheat the oven to 350*
Placing paper muffin c in muffin pan
SECOND STEP:
Mixing streusel topping in  bowl
In every other small bowl, toss blueberries with 2 tbsp flour, toss till blueberries are coated, take away with slotted spoon to shake off extra flour.
THIRD STEP:
In a medium bowl, integrate flour, baking powder and salt
In the massive bowl, blend the butter and sugar till fluffy, then upload the eggs, vanilla, milk, lemon extract and lemon zest.
Using an electric powered mixer, blend properly.
FOURTH STEP:
Stir in flour till simply blended
Gently stir withinside the blueberries
FIFTH STEP:
Fill every muffin cup ⅔ full
Sprinkle every muffin with approximately 1 tablespoon streusel topping
Bake for 20-25 minutes, till the tops are golden brown
STEP SIX:
Test with a toothpick withinside the center, if it comes out easy it is cooked.
STEP SEVEN:
Allow to chill for a couple of minutes earlier than disposing of and putting on a cooling rack
Serve right away or maintain properly protected at the counter
