Cheese, Potato & Sausage Casserole


*ingredients:

°3 cups potatoes, peeled and cubed, boiled until soft but not soft.
°1 pound smoked sausage, thinly sliced, boiled until soft but not mushy
°4 tablespoons butter
°4 tablespoons of flour
°2 and a half cups or milk
°Salt and pepper to taste
 °½ pound velveta cheese, cutting to cubes
°1/2 cup shredded cheddar cheese
°1/4 teaspoon smoked paprika

In a large skillet over medium-low heat, season hot dogs with 1 to 2 tablespoons olive oil, stirring, until slightly browned.
Spraying 9*13 baking dish with cook spray. Transfer the cooked potatoes and sausage to a baking dish, stirring, until evenly distributed.
Raise the heat to medium and add the butter to the skillet. When it melts, whisk it into the flour. Let it cook for a minute, whisking constantly to remove the flour taste. Slowly add half and half, 1/4-1/2 cup at a time, whisking constantly until combined. Continue cooking until it thickens.
Add velveta, paprika, salt, and pepper, stirring occasionally, until completely dissolved and sauce is smooth.
Pour the cheese sauce evenly over the potatoes and meat. Sprinkle the grated cheese evenly on top.
Bake at 350 degrees for 35-45 minutes, or until potatoes are tender and casserole is golden on top.
