BBQ & Chicken Casserole


*INGREDIENTS:

°1 lb chicken or breast fillets, cut into pieces
°3 tbsp. barbecue seasoning, divided
°1/2 cup barbecue sauce
°3-4 medium russet potatoes, cut into small pieces
°1 cup grated cheddar cheese
°1/2 c cook and crumbled bacon
°1 tbsp. extra virgin olive oil
°2 green onions, chopped

* DIRECTIONS:

Preheat the oven to 475 F.
Toss cubed potatoes with extra virgin olive oil, 1 tbsp barbecue seasoning. Transfer potatoes to a baking dish lined with cooking spray. Bake the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through, crispy and golden on the outside. While the potatoes cook, in a large bowl, combine the chicken, barbecue seasoning and barbecue sauce, refrigerate. Once the potatoes are cooked through, remove from the oven and lower the oven temperature to 400 F. Topping cooked potatoes with bbq chicken mixture. Bake another 25 minutes, turning occasionally. In another bowl, combine the cheese, bacon and green onion and top the chicken with the cheese mixture. Return the casserole to the oven and cook for 5 to 10 minutes until the cheese mixture is melted.
