- Apple bread -


*Ingredients

°1/2 cup unsalted butter, softened
°1/2 cup granulated sugar
°1/2 cup lightly packed brown sugar
°1/4 cup buttermilk
°2 teaspoons of yeast
°2 eggs
°1 1/2 teaspoon vanilla
°2 cups all-purpose flour
°2 teaspoons homemade apple pie spice
°1/2 teaspoon of salt
°2 cups grated and peeled apples (about 4 medium or 2 large) (see note below)
°3/4 cup chopped pecans
°1/2 cup dried cranberries
+For the streusel topping
°3 tsp flour
 °1/4 teaspoon apple pie spice
°2 tablespoons unsalted butter
°1/3 cup chopped pecans

* Instructions :

Preheat the oven to 350°F. Spray 9x5x3-inch loaf pan with nonstick cooking spray; put aside.
In bowl of an electric blender fitted with paddle attachment, or in a bowl with an electric mixer, beating butter on medium-high speed for for 30 sec.
Add the sugars and mix until well blended.
Add buttermilk and baking powder; beat until smooth.
Adding eggs and vanilla; beat to well incorporated.
In a medium bowl, combine flour, apple pie spice and salt, whisk until well blended.
Slowly add the flour mixture to the bowl and mix on low speed until just incorporated.
Stirring in apples, pecans & cranberries.
Pour batter to prepared pan; distribute equally. Prepare streusel filling.
In a small bowl, combine brown sugar, flour and apple pie spice. Using a pastry blender, stir in the butter until the mixture resembles coarse crumbs. Stir in the pecans. Spoon the streusel filling over the batter, gently pressing them into the batter.
Baking for 60 to 65 min 
Cool in pan on wire rack for 10 minutes. Remove from mold. Cool completely on a wire rack.
