Almond biscuits


°375g flour
°180g softened unsalted butter
°75g sugar
°75g ground almonds
°1 egg yolk
°2 tbsp. c. bitter almond essence
°1 tbsp. c. baking powder
°30 whole blanched almonds
°1 beaten egg yolk
°2 tbsp. c. water

* Steps 

Preheat oven to 180°C (thermostat 6).
Line a baking sheet with parchment paper.
In a bowl, put the butter, sugar, bitter almond essence and egg yolk. Mixing with a whisk to mixture whitens.
In a second bowl, mix the ground almonds, flour and baking powder. Add to the previous mixture then mix the dough.
Form balls of dough by rolling them between your hands, then place them on the baking sheet. Flatten slightly with the palm of your hand and push an almond into the center of each cookie.
Mix the beaten egg yolk with the water and brush the biscuits with it, using a pastry brush. Bake for 10 minutes. Leave to cool on a wire rack before serving.
