AMISH CINNAMON BREAD




A good original bread, perfect for the fall and winter months.

*Ingredients (6 people):

°1 tablespoon ground cinnamon
°1 teaspoon sugar
°1 teaspoon salt
°50g butter + mold nut if it is not silicone
°150 ml milk
°2 bags of dry yeast
°2 eggs
°500 grams of flour

* Preparation:

Dissolve yeast with sugar and 200 ml of lukewarm water.
Leave it to rest for 15 minutes.

Melting butter also salt in luke-warm milk.
Mixing yeast with cinnamon.
Knead with a mixer equipped with a dough hook, adding 150 grams of flour several times.
Knead for 10 minutes until the dough becomes homogeneous and smooth.
Add eggs one at a time to the mixture.
Cover the bowl with a damp cloth and let it rise for an hour in a warm place (25°C), away from drafts.
The dough should double in size.

Put the rest of the flour on a work surface and add the raised dough.
Knead for 10 minutes.
Put the dough in a rectangular mold greased with butter and leave it to ferment again for two hours under the same conditions.
It should double in size.

Preheat the oven to 240 ° C (8 Thursday) and cook for 10 minutes.
Reduce the heat to 180 °C (the sixth) and continue cooking for 30 minutes.
The baking surface should be golden. Flip it onto a wire rack.
