Vegetable Barley Soup


Easy to make and delicious. Vegetable broth, barley, and plenty of vegetables make this soup hearty and filling. I use and recommend organic products. Please add a review if you do. Enjoy!

*Ingredients :

°1 yellow onion chopped
°2 carrots, cut into ½ . shaped circles
°2 celery stalks chopped
°1 sweet potato, peel and cut to 1-inch pieces
°4 cloves garlic minced
°1 1/2 cups frozen green beans
°Half a cup of pearl barley
°1 teaspoon paprika
1 teaspoon dried thyme
°¾ teaspoon dried thyme
°Half a teaspoon of salt
°Half a teaspoon of ground pepper
°1 (14 ounce) can diced tomatoes
°6 cups low-sodium vegetable broth
°2 cups of water
°Half a cup of chopped parsley

* Methods : 

Combine all ingredients, except parsley, in a large (6-quart) slow cooker.
Simmer, on low heat, to barley soft, for 8 h .
Add parsley, stirring. serve.
