Taco Stuffed Peppers


*Ingredients :

°Extra virgin olive oil
°1/2 onion, chopped (about 1 cup)
°1 clove minced garlic
°1 pound minced meat
°kosher salt
°Freshly ground black pepper
°2 tbsp. chopped coriander
°1 tsp. chili powder
°1/2 tsp. ground cumin
°1/2 tsp. smoked red pepper
°3 halved bell peppers (without seeds)
°1 c. grated cheddar
°1 c. shredded monterey jack
°1 c. chopped lettuce
°Pico de Gallo to serve
°Hot sauce for serving
°Lemon wedges for serving

* Directions : 

Preheat oven 375 degrees & spraying  baking dish with cook spray.
In  skillet on medium heat, heat for 1 tsp olive-oil.
Adding onions & cook To onions soften, for 5 min. Stirring in garlic & cook To fragrant, other minute. Add ground beef, & cooking To no longer pink, for 5 min. drain
Adding chili powder, ground cumin, & paprika to beef mix, & seasoning with salt & pepper.
Drizzling bell peppers with olive-oil & seasoning with salt // pepper. Placing sliced ​​capsicum in baking dish and pour the meat mix into every pepper. Covering with cheese also bake To cheese is melt & pepper is tender, for 20 min.
Covering every pepper with lettuce & serving with pico de gallo, hot sauce & lemon wedges.
