Stuffed tomato tacos are the perfect end-of-summer meal, when the nights are still hot and good tomatoes are plentiful. This easy, low-carb recipe comes together in less than half an hour, all in one skillet, using ground beef, and spicy taco seasoning, then loaded with your favorite toppings and sauces.
* Ingredients :
° 1 tablespoon extra virgin olive oil
° 1 pound 80/20 ground beef
° 1 medium onion chopped
° 1 packet taco seasoning
° 4 large tomatoes, ripe beef
° 1/2 c shred cheese mexican
° 1/2 cup sauce (heat of your choice)
° 1/2 cup iceberg lettuce (grated)
° 1/4 cup sour cream
* Directions :
Cooking beef taco
Heat oil in medium-sized fry pan on medium heat. Adding onions & cooking about 5 min . Add ground beef and taco seasoning, cook for an additional 8 minutes, draining excess fat.
Prepare the tomatoes
Slice the tomatoes, being careful not to cut all of them, to make 6 wedges, again, making sure not to cut all of them and then open the wedges.
Divide the taco meat among the tomatoes and top with the cheese, then the lettuce and sauce.
Then add a little sour cream
