Lazy Day Oatmeal Cake



This is a good cake for any lover. It's top serve hot too.
Wonderfully moist & delicate. I made 2 cakes instead of 1 large and froze 1 for later. It's specially good when warm or reheated.

* Ingredients:

° 1 cup uncooked oats (instant or regular, I used oat flakes)
° 1 1/4 cup boiling water
° 1/2 cup butter or 1/2 cup ghee
° 1 cup granulated sugar
° 1 teaspoon vanilla
° 2 eggs
° 1 1/2 cups flour
° 1 teaspoon baking soda
° 1/2 teaspoon salt
° 3/4 teaspoon cinnamon
° 1/4 teaspoon nutmeg

° 1/4 cup butter or 1/4 cup melted ghee
° 1/2 cup brown sugar
° 3 tablespoons cream or 3 tablespoons milk
° 3/4 cup shredded coconut
° 1/3 c chop nuts (optional)

* Methods :

In  bowl, soak oats in boil water about 20 min .
Meantime, measure butter & sugars to mixing bowl also beat to light.
Beat in eggs // vanilla.
Sift flour & measure, again sift with soda / spices.
Removing beaters from cream mix & fold in soaked oats.
Sift flour mix & stirring .
Flip to buttered 9*9 saucepan & baking at 350°F about 40-50 min .
Blend all decorate ingredients.
Do not remove the cake from the pan but while it is still hot top it and place it under the grill until it bubbles and turns golden.
Watch carefully.
