Cheesecake Turtle



If you don't know why this is {almost} Turtle Cheesecake, I'll tell you right now.It has all the characteristics of a turtle cheesecake: chocolate, caramel, but it lacks nuts, so it's almost a turtle cheesecake. You understand?! OK…

° 1 3/4 cups chocolate graham crackers (about 14 cookies or 1 1/2 sleeves chocolate graham crackers)
° 1/3 cup butter, about 14 crackers or 1 1/2 sleeves chocolate graham
° 3 (8oz) pack creamcheese, soft
° 1 can (14 oz) sweetened condensed milk
° 1/2 cup granulated sugar
° 3 large eggs
° 3 tablespoons of lime juice
° 1 tsp vanilla
° 1 1/2 cups (9 oz) semisweet chocolate chunks / chips
2 tbsp. Chocolate syrup or ice cream topping
° 2 tbsp. 1 tbsp caramel syrup or ice cream
° 1/4 cup MINI Semi-Sweet Chocolate Chips / Chips
° Optional: 1/2 cup coarsely chopped pecans (this makes a turtle cheesecake, omit for an almost turtle cheesecake.)

* Preparation : 

Preheat oven 300 * F. Greased 9inch spriingform pan. Covering bottom & sides of pot with foil.

Mix chocolate crumbs & butter in  bowl. Press the bottom and 1 inch down the sides of the prepared springform pan. Bake for 10 minutes. Remove from the oven.Whisk cream cheese and sweetened condensed milk in a large bowl until smooth.Adding sugar, eggs, lime juice also vanilla extract; beat to combined.

Micro-wave 1½ c chunks in un-covered micro-wave safe bowl on HIGH (100% power) about 1 min; STIRRING. Pieces may retaain few  their shape. If obligatory, microwave about an additional 10 to 15 sec, stirring to pieces are melt .
Stir 2 c cheesecake batter to melt pieces; blend well (it will be REALLY thick.) Alternatively, placing pasta in crust start & ending with yellow dough.

Place a springform pan wrapped in foil in the center of a wide rimmed baking sheet. Place in the oven. Filling baking sheet with water, sur-rounding  cheesecake. Close the oven and bake for 70 to 75 minutes or until the edge is set. Keep the door closed. Turning off oven and permit stand 2 to 3 h  with oven door still close.

Removing cheesecake from oven and let cold to room temperature. Time cool, run  hot knife round edge of cheesecake. Drizzle wiith chocolate syrup & also caramel on top also sprinkling with mini pieces (and nuts if desired).

Refriigerate about severaal h or overnight. Removing sides pan, tranche with hot knife, running knife under hot water among passes.
