BLUEBERRY CHEESECAKE πŸ˜‹



Today I will present a delicious winter dessert: blueberry cheesecake. A surprisingly light dessert, with both sourness and sweetness. A real joy!


* Ingredients :

° 1 c graham cracker crumbs 1/2 cup old-fashioned rolled oats (you can use quick-cooking oats)
° 1/2 c ground walnuts or nuts your choice
° 2 tbsp brown sugar
° 1/2 cup melted butter or ghee or 8 tablespoons

Mix all ingredients and press into an 8" x 8" baking pan. Baking in an oven preheated 350 degrees about 10 to 12 min . Removing it & permit it cool down.
cream cheese filling (this is like the cream cheese pie filling we all made before)

* Ingredients :
° 1 (8 ounce pack) cream cheese soft 
° 1 can of sweetened condensed milk (14 ounces) (not evaporated milk)
° 1/3 cup lemon juice
° 1 teaspoon vanilla
Mix the ingredients and cook over high heat for 3 or 4 minutes. Pour over the cooled crust. Chill for 3 hours.
Fresh blueberries
° 2 cups fresh blueberries (you can use frozen)
° 1/2 cup sugar
° 1 tablespoon cornstarch
° 1/4 teaspoon cinnamon
° 1/4 teaspoon nutmeg
° 1/2 cup water
° 1 tablespoon lemon juice
 
Combine all garnishing ingredients except lemon juice and bring to a boil over the stove, stirring constantly so as not to burn.
Cooking for 2 min to it thickens. Removing from heat, adding lemon juice & let  cool. Pour on cheesecake after it has cool for 3 h .
Continue this cheesecake refrigerated.
