Shirley-Temple-Cake



Have you ever tried something so delicious that you could hardly stand it... and something you shocked more than you actually made? This is one of those recipes.Don't be fooled by the fact that it doesn't contain baking powder or baking soda. This is thick, but moist, it doesn't need it because of Seven Up! Seven Up Pound Cake is a classic recipe, and this cherry-stuffed cake is a fun twist to that old-fashioned recipe. To prepare this recipe, you will need the following ingredients:

+For cake:
° 1 1/2 cups butter (soft)
° 3 cups granulated sugar
° 5 large eggs
° 3 cups all-purpose flour
° 2 teaspoons lemon extract
° 3/4 cup 7up
° 10 ounces maraschino cherries (drained and juice reserved
+For glazing:
° 2 cups powdered sugar
° 1 teaspoon lemon extract
° 3-4 tablespoons of milk
 
* Directions :

Heat oven 325 degrees.  
In a large bowl, mix together butter (1 1/2 cups or 3 sticks) and sugar until light and fluffy.
Adding eggs & keep mixing until mixed .
Add the flour and mix again until the mixture is smooth.
Pour in the lemon extract and 7Up and whisk until combined.
Fold the cherry.
Grease a frying pan with ghee, then sprinkle it with flour.
Spread the mixture in a greased and floured tray and bake for 1½ hours or until the center is done.
Leave the cake to cool for 10-15 minutes in the pan.
Invert the cake onto a serving plate and let it cool slightly, then use a skewer with holes all over the top of the cake and slowly pour the reserved cherry juice over the top making sure the juice soaks in.   It's okay to seep to the bottom to soak, too.
Let it cool completely.
Meanwhile, mix the glaze ingredients together and sprinkle over the surface of the cake.
Add more cherries if desired.
