*Roast-potatoes-Onions & Carrots*



This summer, this sweet and delicious carrot and brown sugar stir-fried vegetables is very popular with my vegetarian nieces.

* ingredients :

° 6 medium sized pods, chopped
° 6 medium grains, peeled and chopped
° 3 medium sized onions, chopped
° 6 crushed garlic cloves
° ¼ teaspoon dried sage
° ¼ teaspoon dried basil
° ½ cup extra virgin olive oil
° 2 tsp vinegar balsamic
° 2 tsp light sugar brown
° Sea salt & ground black pepper to taste

* Directions  :

Step 1
Preheat the oven to 200°C.
Step 2
Put the potatoes, carrots, onions, garlic, sage, and basil in a large bowl. Add oil and balsamic vinegar and stir until covered. Transfer it to a folded baking sheet.
Step 3
Roast in the preheated oven, flipping a few times, until cooked through, about 30 minutes. Remove from the oven and sprinkle with brown sugar. Continue roasting for 10 minutes. Season with sea salt and pepper just before serving.
