* Ingredients :

° 1/2 red onion
° 6 Roma tomatoes
° 2 green onions
° 1-3 tablespoons lemon juice
° 1/4 cup coriander
° 2 jalapenos optional

* Directions :


Cut the tomatoes into quarters.

Place the red onion, 0-2 jalapenos (seeded and de-seeded), cilantro, lemon and six-quarters of a tomato in a Vitamix.
On the Vitamix: Go to variable speed 1, then increase speed to 5, mixing for 15 to 20 seconds using the tamper to compress ingredients into the blades.

Fresh sauce should last 5-7 days stored in an airtight container in the refrigerator, so eat it!

Place red onion, 0-2 jalapeño peppers (seeded and de-seeded), cilantro, lemon and six-quarters of a tomato in a Vitamix.
Whisk 10 times until slightly lumpy, add remaining Roma tomato quarters and blend until blended but still chunky.
